{"id":1615,"date":"2017-05-07T21:27:54","date_gmt":"2017-05-08T02:27:54","guid":{"rendered":"https:\/\/sites.dwrl.utexas.edu\/rhetoric-of-food\/?p=1615"},"modified":"2017-05-07T21:27:54","modified_gmt":"2017-05-08T02:27:54","slug":"tasty-video-chicken-tacos-with-asian-pear-slaw","status":"publish","type":"post","link":"https:\/\/sites.dwrl.utexas.edu\/rhetoric-of-food\/2017\/05\/07\/tasty-video-chicken-tacos-with-asian-pear-slaw\/","title":{"rendered":"Tasty Video: Chicken Tacos with Asian Pear Slaw"},"content":{"rendered":"<p>Video and Recipe by Nima Faegh<\/p>\n<p><iframe width=\"676\" height=\"380\" src=\"https:\/\/www.youtube.com\/embed\/gDrTSCx1z3c?feature=oembed\" frameborder=\"0\" allowfullscreen><\/iframe><\/p>\n<h4>Chicken Tacos &amp; Asian Pear Slaw<\/h4>\n<p><span style=\"text-decoration: underline\">For chicken:<\/span><br \/>\n1 1\/2 lb boneless skinless chicken breast<br \/>\n1 tablespoon fajita seasoning<br \/>\n1 tablespoon meat tenderizer<br \/>\n1 cup sliced yellow onion<br \/>\n4 tablespoons vegetable oil<\/p>\n<p><span style=\"text-decoration: underline\">For slaw<\/span>:<br \/>\n1 diced asian pear<br \/>\n1\/2 cup shredded purple cabbage<br \/>\n2 diced avocados<br \/>\n2 diced roma tomatoes (seeds removed)<br \/>\n2 thinly sliced serrano peppers<br \/>\n1\/2 cup freshly squeezed lime juice<br \/>\nSalt and pepper to taste<\/p>\n<p><span style=\"text-decoration: underline\">For serving<\/span>:<br \/>\nTortillas<br \/>\nSour cream<br \/>\nGrated cheese (preferably cheddar or pepper jack)<br \/>\nChopped cilantro<\/p>\n<h4><strong>Directions<\/strong><\/h4>\n<p>Combine asian pear, cabbage, avocados, tomatoes, serrano peppers, lime juice, salt, and pepper in a bowl. Cover and refrigerate.<\/p>\n<hr \/>\n<p>Cut chicken in half lengthwise. Mix fajita seasoning and tenderizer together, along with any other preferred spices (chili powder, cumin, garlic powder, etc.). Coat chicken with tenderizer\/spice mixture and let marinate for 15 minutes. While marinating, heat half of the oil in a pan on medium-high heat, and saute onions until just beginning to caramelize. Set aside grilled onions. Add remaining oil and chicken. Pan-fry until fully cooked. Transfer to cutting board and pull apart with two forks.<\/p>\n<hr \/>\n<p>Lightly toast the tortillas in the same skillet used for chicken. Set warm tortillas on a plate, and place desired amounts of ingredients in the following order: sour cream, chicken, onions, slaw, cheese, and cilantro.
