You stumble into the kitchen anxiously awaiting a breakfast taco buffet that will serve as the cure to your hangover, but as expected, an empty carton of milk and last week\u2019s Chinese take-out stare blankly back at you from the empty shelves in the fridge. You could cave in and eat those borderline rotten rice noodles, OR you could sink your teeth into a warm, fluffy quiche that you made the day before that will certainly be the ailment to all of your hangover problems.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"size-full wp-image-263 aligncenter\" src=\"https:\/\/sites.dwrl.utexas.edu\/rhetoric-of-food\/wp-content\/uploads\/sites\/43\/2016\/11\/Screen-Shot-2016-11-15-at-3.44.31-PM.png\" alt=\"screen-shot-2016-11-15-at-3-44-31-pm\" width=\"265\" height=\"202\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>6\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 eggs<\/p>\n<p>\u00be c\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 milk<\/p>\n<p>\u00bd c\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 onion, chopped<\/p>\n<p>\u00bd c\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 tomato, diced<\/p>\n<p>\u00bd c\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 shredded cheddar cheese<\/p>\n<p>1 c\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 corn tortilla chips, lightly crushed<\/p>\n<p>1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 jalapeno, finely chopped<\/p>\n<p>1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 premade pie crust<\/p>\n<p>1 T\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 cilantro, chopped<\/p>\n<p>1 T\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 butter<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Directions <\/strong><\/p>\n<p><strong>\u00a0<\/strong>Preheat oven to 375 degrees<\/p>\n<p>Remove premade piecrust from fridge to bring up to room temperature<\/p>\n<p>In a saut\u00e9 pan heated to medium high\u2026<\/p>\n<ul>\n<li>Add in butter until melted<\/li>\n<li>Add onions and jalapeno and let cook until the vegetables have taken on a slight char, stirring frequently<\/li>\n<li>Add tomatoes and cook until softened<\/li>\n<li>Remove from the stove top and let vegetables cool to room temperature<\/li>\n<\/ul>\n<p>In a large mixing bowl\u2026<\/p>\n<ul>\n<li>Crack the eggs into the bowl and add milk, cilantro, and salt &amp; pepper for seasoning<\/li>\n<li>Whisk to combine<\/li>\n<\/ul>\n<p>In a pie dish\u2026<\/p>\n<ul>\n<li>Unroll piecrust into the pan and press the dough firmly against the edges<\/li>\n<li>Scatter crushed tortilla chips, saut\u00e9ed vegetable mixture, and cheese around the pan<\/li>\n<li>Pour the egg mixture over the top (the pan should be quite full)<\/li>\n<\/ul>\n<p>Put in the oven and bake for 35-40 minutes, or until the crust is golden brown and the top of the quiche is lightly browned and bubbly<\/p>\n<p>&nbsp;<\/p>\n<p><strong>*Avocado Crema <\/strong><\/p>\n<p>This *optional (but not) sauce is for the hung-over-go-getter in you. If you are feeling especially ambitious during your post-party endeavors (or want to add some class to your meal to make up for your lack- there-of the night before) top your quiche with this velvety crema to finish off the dish.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1 c\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 sour cream<\/p>\n<p>1 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 lime, juiced<\/p>\n<p>\u00bc c \u00a0 \u00a0 \u00a0 \u00a0 milk<\/p>\n<p>1 T\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 chive, finely chopped<\/p>\n<p>1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 avocado<\/p>\n<p>Salt and pepper to taste<\/p>\n<p><strong>Directions<\/strong><\/p>\n<p>In a blender, add sour cream, milk, lime juice, chive, and salt and pepper to taste.
