Some are easier than others to make but I wanted to challenge myself in cooking these dishes. They are all dishes that have pretty basic ingredients but have different ways of putting them together in the cooking process. I think it will be interesting to see how I do in cooking them. <\/span><\/p>\n<p><span style=\"font-weight: 400\"><strong>PBJ Acai Bowl<\/strong> <\/span><\/p>\n<p><span style=\"font-weight: 400\">Ingredients \u00a0<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400\">2 Sambazon Original Superfruit Pack<\/span><\/li>\n<li><span style=\"font-weight: 400\">1\/2 Banana<\/span><\/li>\n<li><span style=\"font-weight: 400\">1\/8 c Apple Juice<\/span><\/li>\n<li><span style=\"font-weight: 400\">1 handful of Blackberries<\/span><\/li>\n<li><span style=\"font-weight: 400\">1 spoonful of Nut Butter<\/span><\/li>\n<li><span style=\"font-weight: 400\">Toppings: granola, blackberries, honey<\/span><\/li>\n<\/ul>\n<p>Directions<\/p>\n<ol>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Blend all ingredients until smooth. <\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Scoop into a bowl and top with granola, more blackberries and a drizzle of honey.<\/span><\/li>\n<\/ol>\n<p><a href=\"http:\/\/www.sambazon.com\/recipe\/pbj-protein-bowl\/\"><span style=\"font-weight: 400\">http:\/\/www.sambazon.com\/recipe\/pbj-protein-bowl\/<\/span><\/a><\/p>\n<p><span style=\"font-weight: 400\"><strong>Tortilla Soup<\/strong> <\/span><\/p>\n<p>Ingredients<\/p>\n<ul>\n<li><span style=\"font-weight: 400\">2 tablespoons vegetable oil<\/span><\/li>\n<li><span style=\"font-weight: 400\">1 small onion, diced<\/span><\/li>\n<li><span style=\"font-weight: 400\">2 tablespoons minced garlic<\/span><\/li>\n<li><span style=\"font-weight: 400\">2 jalapenos, finely diced<\/span><\/li>\n<li><span style=\"font-weight: 400\">6 cups low-sodium chicken broth<\/span><\/li>\n<li><span style=\"font-weight: 400\">1 (14.5-ounce) can fire roasted diced tomatoes<\/span><\/li>\n<li><span style=\"font-weight: 400\">1 (14.5-ounce) can black beans, rinsed and drained<\/span><\/li>\n<li><span style=\"font-weight: 400\">3 chicken breasts, boneless and skinless<\/span><\/li>\n<li><span style=\"font-weight: 400\">2 limes, juiced, plus wedges for garnish<\/span><\/li>\n<li><span style=\"font-weight: 400\">Salt and freshly ground black pepper<\/span><\/li>\n<li><span style=\"font-weight: 400\">1 cup roughly chopped fresh cilantro leaves<\/span><\/li>\n<li><span style=\"font-weight: 400\">1 (8-inch) flour tortilla, grilled, cut into thin strips<\/span><\/li>\n<li><span style=\"font-weight: 400\">1 avocado, pitted, sliced<\/span><\/li>\n<li><span style=\"font-weight: 400\">1 cup shredded Monterrey cheese<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400\">Directions<\/span><\/p>\n<ol>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">In a large saucepan heat the vegetable oil. Add the onions and cook for 2 minutes. <\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Once the onions have softened add the garlic and jalapenos and cook for another minute. <\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Pour the chicken broth, tomatoes and beans into the pot and bring to a boil. <\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Once at a boil lower heat to simmer and add your chicken breasts. Cook the chicken for 20 to 25 minutes. <\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Once chicken is cooked remove from pot. When cool enough to handle shred it and set it aside. <\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Add lime juice and fresh cilantro to the pot. In a serving bowl add a mound of shredded chicken. <\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Ladle soup over chicken and top with a lime wedge, grilled tortilla strips, avocado slices and cheese.<\/span><\/li>\n<\/ol>\n<p><a href=\"http:\/\/www.foodnetwork.com\/recipes\/chicken-tortilla-soup-recipe.html\"><span style=\"font-weight: 400\">http:\/\/www.foodnetwork.com\/recipes\/chicken-tortilla-soup-recipe.html<\/span><\/a><\/p>\n<p><strong>Polenta <\/strong><\/p>\n<p><span style=\"font-weight: 400\">Ingredients <\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400\">3 1\/2 cups canned low salt chicken broth<\/span><\/li>\n<li><span style=\"font-weight: 400\">2 1\/2 cups whole milk<\/span><\/li>\n<li><span style=\"font-weight: 400\">1 teaspoon salt<\/span><\/li>\n<li><span style=\"font-weight: 400\">1\/2 teaspoon ground black pepper<\/span><\/li>\n<li><span style=\"font-weight: 400\">1 1\/2 cups yellow cornmeal<\/span><\/li>\n<li><span style=\"font-weight: 400\">3\/4 cup grated Parmesan cheese<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400\">Directions <\/span><\/p>\n<ol>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Bring first 4 ingredients to boil in heavy large saucepan over high heat. <\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Gradually whisk in cornmeal.
