I\u2019ll repeat that: if you like <strong>good food<\/strong> that is <strong>easy to cook<\/strong> and requires <strong>little to no cleaning<\/strong>, this recipe is for <strong>YOU!<\/strong> I should be hearing the Hallelujah Chorus from every college kid who has a kitchen right about now, so you\u2019re welcome.<\/p>\n<p>After hours of shameless browsing on Pinterest, collecting hundreds and hundreds of recipes, and repeatedly telling myself that, \u201cI\u2019ll cook that eventually,\u201d I finally decided it was time to buckle down and cook one. Although I love to cook myself, as an average college student, I rarely find the time between studying, catching up on reading, and assignments (and by that, I mean severe procrastination and binge watching Netflix) to spend hours in the kitchen prepping, cooking, and then cleaning up in order to make spectacular meals. So when I started my adventure to select a recipe from my \u201c\u00bfQu\u00e9 quieres comer?\u201d board on Pinterest, I kept the idea of simplicity and minimal cleanup in mind. And with that said, I present to you a recipe for Thai Salmon in foil. Believe me, I understand that the \u201cin foil\u201d might kill the delicious appeal of the dish, but that foil is the almighty savior when it comes to messes. It\u2019s a simple dish that requires what I like to call a \u201cdump and bake\u201d technique that require little to no skill in the kitchen, so come one, come all and make the Thai Salmon in foil!<\/p>\n<p>Adapted from Chungah Rhee\u2019s food blog, <em>Damn Delicious.<\/em><\/p>\n<p><a href=\"http:\/\/damndelicious.net\/2016\/07\/09\/thai-salmon-foil\/print\/\">http:\/\/damndelicious.net\/2016\/07\/09\/thai-salmon-foil\/print\/<\/a><\/p>\n<p><strong>Yield: <\/strong>4 Servings<\/p>\n<p><strong>Prep Time: <\/strong>10 Minutes<\/p>\n<p><strong>Cook Time: <\/strong>15-20 Minutes<\/p>\n<p><strong>Total Time:\u00a0<\/strong>25-30 Minutes<\/p>\n<p><strong>Note from writer:\u00a0<\/strong>If you want to go above and beyond, throw some asparagus underneath the salmon in the foil, spoon the chili mixture on top, throw it in the over, and you\u2019ve got a full meal in a few simple steps!<\/p>\n<h1><strong>What you\u2019ll need:<\/strong><\/h1>\n<p>4 (5-6 oz) skinless salmon filets<\/p>\n<p>2 tablespoons of low-sodium soy sauce<\/p>\n<p>2 cloves garlic, minced<\/p>\n<p>1 tablespoon of fish sauce<\/p>\n<p>*Don\u2019t panic! It adds wonderful flavor to the dish.*<\/p>\n<p>1 tablespoon on freshly grated ginger<\/p>\n<p>Juice of 1 lime<\/p>\n<p>1 tablespoon of Sriracha<\/p>\n<p>*Optional, but if you can handle it, go for it!*<\/p>\n<p>\u00bc cup peanuts, chopped<\/p>\n<p>*Optional if allergies are an issue*<\/p>\n<p>2 tablespoons chopped fresh cilantro leaves<\/p>\n<h1><strong>What to do:<\/strong><\/h1>\n<ol>\n<li>Preheat the oven to 375 Degrees F.<\/li>\n<li>Place salmon filets in 4 separate sections of foil (large enough to closer over the fish entirely \u2013 individual wrappers make serving portions simpler).<\/li>\n<li>Place all four filets, separately wrapped on one baking sheet, and set aside.<\/li>\n<li>To make sauce, whisk together chili sauce, soy sauce, garlic, fish sauce, ginger, lime juice, and Sriracha in a small bowl then set aside.<\/li>\n<li>Make sure to fold all sides of the foil around salmon upward, so it forms a little barrier so sauce will not spill when applied.<\/li>\n<li>Spoon the chili mixture over the salmon filets making sure each is covered, then fold the foil to cover the salmon (make sure the foil packet is completely closed).<\/li>\n<li>Place into the oven and bake until cooked through (about 15-20 minutes).<\/li>\n<li>Garnish with peanuts and cilantro (if desired) then serve immediately.<\/li>\n<\/ol>\n<p>After the cooking is through and the meal has been enjoyed thoroughly, I hope, all the cleanup really requires is throwing the foil away.
