Sweet Potato Hash

Sweet potato hash,

The wonderful mixture of

Savory and sweet.

Makes 2 servings

Prep time: 10 minutes

Cook time 40 minutes

Cost of all the ingredients except for spices and olive oil: $11.56

Cost for meal based on what you use: $4.42

Equipment needed: potato peeler, foil, large pan, large skillet, sharp knife

Ingredients:

Sweet Potatoes

  • 2 medium sweet potatoes
  • ½ teaspoon of paprika
  • 1 teaspoon garlic powder
  • salt to taste
  • pepper to taste

Toppings

  • 1 tablespoon of olive oil
  • ½ an onion chopped
  • 4 ounces sliced mushrooms
  • 5 ounces of ground sausage
  • ¼ cup of mozzarella cheese
  • 2 eggs

Directions:

  • Preheat oven to 450°F
  • Peel and chop sweet potatoes into bite size pieces
  • Place sweet potatoes on a foil-covered pan coat in olive top and spices
  • Cook potatoes for 30-35 minutes or until crisp

Wait 20 minutes after you put the potatoes in the oven to start cooking the rest of the meal:

  • Put onions in skillet with olive oil
  • Cook for 2-3 minutes on medium heat and add mushrooms, stir occasionally
  • Break sausage up into small pieces, then put sausage in pan
  • Cook until sausage is finished cooking and then turn stove off
  • In separate pan cook eggs over easy. Crack eggs in pan and cook on medium heat until the egg whites are firm, but the yolks are still runny.
  • When potatoes are done combine the potatoes and toppings
  • Sprinkle with cheese
  • Put one egg on top of each serving
  • Enjoy!

  1. This recipe looks delicious. I really liked the way that you took the time to show exactly how much it would cost in total and depending on what you use. The way the ingredients and directions were split up made it really easy to read, and makes it seem easy to cook as well. I’m definitely going to try making this.

  2. I was really excited to make this recipe when I saw how delicious it looked. It was very simple to cook and the instructions were easy to understand even for someone like me who has very little cooking experience. I made the dish for my roommate and me and we both loved how it tasted. Having the picture in your recipe made it easy for us to see how the finished product was supposed to look and allowed us to make sure we were on the right track. Overall, it was a very fun experience and tasted delicious!
